I love a good ice cream sandwich, who doesn’t!? But sometimes a feel a little guilty eating them. Here is a lighter way to fulfill the craving while being super festive for the 4th of July!

INGREDIENTS :

– 1 cup of milk

– 1 1/2 cups lite cool whip

– 2 large boxes of sugar free fat free instant vanilla pudding  (3 oz total)

– 16 graham crackers (flavor of your choice) cut in half ( 32 squares total)

– red white and blue sprinkles

DIRECTIONS :

Place 16 of your graham cracker squares (dotted side down) into a rectangle glass dish and then set aside. Keep your other 16 squares close by as well.

Then in a large bowl mix together your milk, instant pudding, and cool whip. It will end up a very thick texture.

Then evenly scoop out generous portions on to each graham cracker square.

Next, empty your sprinkles onto a plate.

Pick up one of your squares with the “ice cream” scoop and press one of your extra squares on top (dotted side out). Squeeze until the “ice cream” gets pushed out the sides.

Then smooth the sides with a spoon and dip each side into the sprinkles.

Place the finishes “ice cream” sandwich back in your glass dish and repeat until all sandwiches are complete.

Once they are all done and back in your glass dish, cover and place in the freezer for about 3 hours or until firm. Then store back in your freezer in an air tight container for up to 2 weeks. Pull out about 15 minutes before you’re ready to eat!
