So ,I knew I wanted to make fish tacos for you guys.. which meant I HAD to make a side to go along with it! 🙂 I am OBSESSED with this mexican corn! SO yummy! Here’s what you’ll need..
INGREDIENTS:
– 8 ears of corn
– 1/3 cup sugar (optional)
– 1/4 red onion, finely diced
– 1/2 cup fresh cilantro, chopped
– 1/4 cup evoo
– 1 tbsp lemon juice
– 1 tbsp honey
– salt & pepper to taste
– 2-3 tbsp butter (optional)
– 1/2 cup grated parmesan cheese (optional)
DIRECTIONS:
Bring a large stock pot of water to boil. Add in 1/3 cup of sugar (optional) and then add in your corn. Cook for for 8 minutes then pull the corn out of the water and into a large bowl. Let sit until completely cool.
Then shave off the corn kernels into a large mixing bowl. Add to the bowl your chopped red onion and fresh cilantro.
In a separate smaller mixing bowl mix together the evoo, lemon juice, honey and salt & pepper. Then add to your corn mixture and toss until everything is well coated.
Serve chilled or at room temperature.
**optional – serve warm with butter and Parmesan cheese… OMG so good! That’s how we ate our left overs. We put the corn in the microwave with the butter and cheese and it changed out lives haha. No other corn will ever live up to it! 🙂
