BACON & EGG AVOCADO SWEET POTATO TOAST

It’s that time of year where we have “bikini season” on our mind and our diets are starting to reflex that. If you’re trying to make healthy choices you’ll love this! I’ve been seeing it all over Pinterest and social media, so I had to give it a try! It’s “Sweet Potato Toast”!! Below I’ll break down how I cooked and prepared the “toast” and one of maaaannnyyy ways you can eat it!

DIRECTIONS:

FOR SWEET POTATO TOAST

First you’ll want to wash and dry your sweet potato(s). Then cut the tips off of each end and slice the entire potato into 1/2-3/4 inch slices.

Then place them on a baking sheet and bake for 10 minutes at 375, flipping half way.

They will end up being about half way cooked. Let them cool completely and then layer them between wax paper (to keep them from sticking together) and put in a freezer bag. I keep them in my freezer so they last longer! When you’re ready to eat one just pull it out of the freezer and toast on your frozen setting until desired tenderness. I usually go through 2 toast cycles.

There are soooo many ways you can use this sweet potato toast, but my favorite is for breakfast with bacon, egg and smashed avocados!

DIRECTIONS:

FOR BACON & EGG AVOCADO TOAST

After you toast your sweet potato toast (as described above) put on a plate and set aside. Take 1 avocado and mash it with salt, pepper, hot sauce, red paper flakes and lime juice (all to taste). Scoop out about 1-2 tbsp and spread it over your “toast”. Then top with a piece of bacon and a fried egg!
