So sorry it’s taken me so long to get this one up! Y’all go crazy for it when ever I post about it on my instagram. So here we go! This one is so easy and tastes sooo good! My mom always made these for my sister and I growing up, and now Mason loves them too! Great for the whole family! Here’s what you’ll need:

INGREDIENTS:

  • 2 bags of organic cauliflower (about 20 oz) steamed according to directions on the bag
  • 1 egg
  • 3 tbsp flour of choice (I’ve used regular, whole wheat, gluten free… they all work)
  • drizzle of extra virgin olive oil about a tbsp)
  • salt to taste
  • oil of choice for frying (I use evoo)

DIRECTIONS:

Put steamed cauliflower in large mixing bowl, and mash with a potato masher. Drizzle with evoo and salt, mix together. Then add in your egg and flour. Mix together until you get a sticky, pliable texture.

Heat oil in frying pan on high heat. Once hot, drop in heaping tablespoon amounts of cauliflower mixture. Let them cook until the bottom side is browned. Then flip and press down into pan with the flat side of you spatula. Flip back and forth until both sides are super brown and crispy. Total time on heat is about 10 minutes.

Place on a plate with paper towel to absorb extra oil, and sprinkle with salt.

Super easy and delicious! We make these for snacks, with burgers or sloppy joes as a substitute for fries or tots! And also with breakfast, instead of potato hash browns!
