CHRISTMAS MORNING BREAKFAST TART

Christmas morning breakfast has always been just as special to me as any other Holiday meal. My mom always made the same thing..  my grandmothers bacon, onion and swiss Quiche Lorraine.  And much like always having Turkey on Thanksgiving, we always had Quiche on Christmas! My sister and I knew every year we would wake up, scope out the presents (priorities), jump on my parents bed to get them up and then wait for my mom to start cooking. It was our tradition!

Josh and I don’t have kids of our own yet (except our sweet pup, Sammy) but when we do I know I’ll want to start a Christmas Morning Breakfast tradition as well. It’s the little things, you know? Until then I figured I’d try out as many recipes as possible! And if you’re looking for a special recipe for your family this Christmas I think you’re going to like this one! Here’s what you’ll need:

INGREDIENTS:

  • 1/2 onion, sautéed in olive oil
  • 6 – 8 pieces of bacon, cooked and torn into thirds
  • 1 large red potato, cubed and cooked in grease from cooking bacon
  • 5 oz bag of finely shredded swiss cheese
  • 8 eggs
  • 1 box (with 2 sheets) puff pastry, thawed in refrigerator over night
  • 4 green onion, chopped (optional)
  • parchment paper

DIRECTIONS:

  • Preheat oven to 400 degrees
  • Place parchment paper on baking sheet (I needed two)
  • Place puff pastry sheet on baking sheet and cut into 4 even squares. Pinch together seams and roll up and pinch all around the edges. (Pictured above)
  • Bake in preheated oven for 10 minutes. Once out of the oven let cool and pat down the middle where it puffed up
  • Evenly spread out your sautéed onions on each square
  • Sprinkle about a tbsp spoon of cheese on each square
  • Then the potatoes and bacon
  • Make sure to leave a whole in the middle of each square to make room for your egg. If you don’t have room you can move around the ingredients to make a small whole
  • Crack on egg in the middle of each square
  • Top each with more cheese
  • Bake in preheated oven for another 10-15 minutes or until your egg is cooked to your liking
  • Once out of the oven garnish with chopped green onions, serve warm out of the oven
