This one is so easy guys! I honestly can’t believe how good it turned out, because usually when I experiment with baking it’s a huge fail! NOT THIS TIME!!
I’ve been trying to find ways to include protein in everything I eat! So I started with the Kodiak Cakes double chocolate protein muffins. But instead of following the directions on the box (why would I do that haha. ha. ha..) I subbed all the ingredients it called for and just mixed it with pumpkin puree and eggs! Keep reading for all the ingredients and directions!
INGREDIENTS:
- 1 box of kodiak cakes double chocolate protein muffins
- 1 15 oz can of pumpkin puree
- 2 eggs
- 3 tbsp peanut butter
- 1/4 cup of dark chocolate chips
DIRECTIONS:
Preheat oven to 375 and grease a 9×13 glass baking dish. In a large bowl mix together muffin mix, eggs and pumpkin puree, then spread evenly into baking dish. Then in a small bowl, heat peanut butter in the microwave for 30 seconds (15 seconds at a time) and stir until smooth and melted. Then drizzle peanut butter over batter. Then sprinkle chocolate chips over that!
Bake in preheated over for 15-20 minutes (check using tooth pick test!).
Let cool (or not.. I couldn’t wait) and serve as breakfast or dessert!
