Are you looking for recipes that are versatile depending on what ingredients you can find at your grocery store? Times are WEIRD y’all!!! I still can’t believe what’s going on in the world right now, but here we are, and we have to try to make the best of it!

I wanted to share a versatile recipe that has no right or wrong, and is sooo yummy, the whole family will love it! Frittatas!!! I grew up on this food! It was a go-to in our house, and actually for dinner! But it’s good any time of day!

I’m sharing the very basic recipe below, with just potato, onion and eggs, but you can literally use ANY ingredients and cook it the same way! It’s a fun way to get creative and use what you have on hand! You can use any type to potato or onion, add in veggies, proteins, what ever you’d like! Sweet potatoes, ham, ground beef, ground sausage, peppers, broccoli, spinach.. anything! Mix it up and use what you have in the house!

INGREDIENTS

– extra virgin olive oil

– 1 large potato, peeled and cubed (or sliced)

– 1/2 large onion diced

– 2 eggs, scrambled

– salt to taste

DIRECTIONS

Heat evoo in medium frying pan on medium to high heat. Once hot, toss in cubed potato and diced onion, and season with salt to taste. Cook until potatoes are crispy on the outside and fully cooked on the inside, about 15 minutes, stirring frequently to make sure they don’t burn or stick. Once potatoes are cooked, spread them out across pan to get one even layer, then pour scrambled eggs evenly over the potatoes. Cook on medium heat until egg liquid starts to thicken and cook, then flip. Cook on flipped side a few minutes then turn off heat and serve immediately.
