This is an easy one! And has been a personal family favorite for as long as I can remember! Best part, NO MAYO!!! So it’s super light!
– One bag of small redskin fingerling potatoes
– olive oil
– red wine vinegar
– italian seasoning
– 1/4 red onion, diced
First dice your potatoes into quarters, then add them to (salted) boiling water. Let cook for about 30 minutes or until you can stick a fork into the potato with out it getting stuck. Then drain water and place potatoes in a serving bowl. Add your diced onions, salt/pepper, italian seasoning, olive oil & vinegar, and mix together. I never really measure when it comes to seasoning, so add to your own taste. This potato salad is good with grilled steak, chicken, BBQ, spiral ham, etc.. Hope you enjoy it as much as my family has!!
