Hey Guys! Hope you all have had a great week! I wanted to share this yummy recipe with you!
To be completely honest, this was totally an experiment for me. I have made cauliflower “Alfredo” before but wanted to spice it up a little this time. I’m SO happy it turned out!
Here’s what you’ll need!
INGREDIENTS :
– 15 oz frozen cauliflower, cooked according to directions on bag
– 12 oz jar of roasted red pepper
– 1 cup almond milk
– 2-3 tbsp extra virgin olive oil
– 1/4 yellow onion, chopped
– 2 tsp mined garlic
– 1 cup chicken broth
– 4 oz garlic herb goat cheese
– salt/pepper to taste
– 1 lb cooked fettuccine noodles
DIRECTIONS :
Start by putting your cauliflower, red pepper and almond milk in a blender and puree until smooth.
Then in a large pan, sauté your onions and mince garlic in evoo. Once onions become semi-translusent add in your cauliflower/pepper mixture.
Next you’ll need to stir in your chicken broth and then add your goat cheese. Stir until everything is nice a smooth. Season with salt/pepper.
Once you have your sauce at the constancy you want, toss in your cooked noodles.
Top with chopped fresh parsley and grated parmesan cheese.
