This Dairy-Free Ice Cream Summer Dessert is one of my favorite things to make! Ice cream is, without a doubt, one of the best summer treats! There’s nothing like enjoying a bowl of ice cream after swimming at the pool or gardening in your backyard – it’s a treat everyone of all ages can enjoy even if you’re dairy-free!
We dairy-free ladies still love ice cream and need to satisfy our sweet tooth! I’ve been making this SUPER easy ice cream pie for years with regular ice cream; however, with all the delicious dairy-free options that are out there now (SO delicious – Ben & Jerry’s are my favorite), it makes it easy to swap creating the perfect summer dairy-free dessert! I usually make two pies at a time, so for two pies you’ll need:
INGREDIENTS
- 2 Oreo Pie Crusts
- 1 Pint of any Vanilla Dairy-Free Ice Cream
- 1 Pint of any Chocolatey Dairy-Free Ice Cream (I like using a chocolate fudge ice cream)
- approximately 2 rows of a pack of Oreos broken into little pieces
- 1 tub of Dairy-Free Whipped Topping (I use a coconut – SO delicious)
DIRECTIONS
- Pull out ice cream about 15 minutes before you begin so it can soften.
- Scoop out a half-pint of vanilla ice cream onto the bottom of each pie crust
- Spread evenly and top with broken Oreo pieces
- Put in the freezer for about 15-30 minutes or until it starts to harden
- Scoop out half of the chocolate ice cream pint onto each pie
- Spread evenly and top with broken Oreo pieces
- Place back into the freezer for another 15-20 minutes
- Spread half of the whipped topping on the very top of each pie and top with broken Oreo pieces
- Cover with the plastic top that comes with your pie crust and put back in your freezer
- Let it freeze for at least an hour to harden completely
When you’re ready to serve, pull out the pie for 10-15 minutes before you cut into it. (Hot water on a metal butter knife makes for the best cut!)
