If you know me, you know that I have a huge sweet tooth! I’ve shared my cookie recipe in the past, but I’ve made some updates recently that I wanted to share. I first created this vegan protein cookie recipe because I LOVE sweets, but I wanted to create something that didn’t have as much sugar. 

The cookies are great for Mason because he’s such a little cookie monster, and I don’t like giving him a lot of sugar. Meanwhile, my husband is very health conscious. He already uses ingredients like bananas, oats, and peanut butter for breakfast, so these cookies really are perfect for everyone!

These cookies taste like a blend of oatmeal chocolate chip cookies and peanut butter no-bake cookies. I feel like they’re even more addicting because they’re completely guilt-free! With about 135 grams of protein and only 88 grams of sugar in the entire batch, our family are definitely fans.

To make the vegan protein cookie recipe, start by preheating the oven to 350 degrees. Then, simply add 3 mashed bananas, 1½ cups of oats, 1 cup of peanut butter, and 1 cup of dark chocolate chips to a large mixing bowl. Mix until you reach an even consistency, then create tablespoon-sized balls of dough. Spread evenly across your pan (about an inch apart), bake for fifteen minutes, and enjoy!

Chocolate Chip Vegan Protein Cookies Recipe

  • 3 Medium Bananas (Mashed)
  • 1 ½ Cups of Quick Oats
  • 1 Cup of Peanut Butter
  • 1 cup of dark chocolate chips

Preheat oven to 350 degrees. Pour all ingredients into a large bowl and mix. Spoon out tablespoon-sized balls and place evenly (about one inch apart) on a baking sheet. Bake for 15 minutes.
