LIGHT BREAKFAST FLATBREAD

INGREDIENTS

– 2 Flat Out spinach flatbreads

– 4 laughing cow light swiss wedges

– 4-5 slices of thick cut deli ham, diced

– 4-5 slices of thick cut deli turkey, diced

– 2/3 medium onion, diced

– 1 tbsp extra virgin olive oil

– 1 1/2 cups of egg white beaters

FOR SAUCE – Mix following ingredients together until smooth

– 2 tbsp mayo

– 1 tsp sriracha

– 1 tsp lemon juice

– 1 tsp sugar

DIRECTIONS 

Place 2 flatbread on baking sheet and place in preheated 350 degree oven for 10 minutes. Meanwhile, heat pan with evoo and sauté onions for about 2 minutes on medium heat. Once onions are translucent add your diced deli ham and turkey. Turn heat on high and stir occasionally until everything has nice golden crispy edges (you’re trying to get the texture of cripsy bacon). Put on a plate and set aside. Now cook your egg whites, I use the same pan to save time with clean up. By this time your flat breads should be ready. Pull out of oven and top each flatbread with 2 laughing cow wedges, spread evenly. Then add your egg whites and onion/deli meat mixture. Lastly, drizzle sriracha sauce over everything. Place flat breads back in oven for an additional 10 minutes, and then let sit for about 1 minute before cutting with pizza cutter.

This is one of mine and Josh’s favorites! We always experiment and try new ingredients! You can try things like bacon, goat cheese, shredded cheddar, really anything you can think of! You can’t mess this up, so have fun with it!
