LIGHT TURKEY CHILI

INGREDIENTS : 

– about 2 tbsp olive oil

– 2 pounds ground turkey

– 2 packets of chili mix (I use gluten free)

– 1 yellow pepper, diced

– 1 red peper, diced

– 1 pablano pepper, diced

– 1 medium onion, diced

1 large can of diced tomatoes (29 oz) – do NOT drain

– 1 regular can of corn – do NOT drain

– 1 regular can of blackbeans – do NOT drain

– 1 small can of tomato paste

optional toppings – Sliced avocado & Plain greek yogurt

DIRECTIONS :

Heat olive oil in large pot at medium to high heat. Add chopped onions and sauté until semi translucent. Then add your ground turkey and stir until meat is browned. Next add your diced peppers and stir until peppers are cooked. Then add your canned tomatoes, corn, & black beans and mix well. **If you accidentally drained your cans, add about a cup of water during this step** Now add your tomato paste and mix well, then pour in your seasoning, stir, and let it simmer on low heat as long as you’d like (the longer it cooks the better!) I let mine cook for at least an hour before it’s served. Make sure to keep checking on it and stir frequently bc you don’t want  the chill to burn and stick to the bottom of your pan.
