MAYO FREE PASTA SALAD! This is another family favorite! My grandmother makes this a lot once the warmer weather rolls in! If you’re starting to plan your Easter meal this is a great one to add to the menu!
– 1 pound of bow tie noodles
– 16 oz block of mozzarella
– 1 can of large black pitted olives
– 1 container of cherry tomatoes
– about 10 fresh basil leaves
– extra virgin olive oil (enough to coat your noodles)
Start with boiling your noodles. While thats cooking prep all of your ingredients by slicing your tomatoes and olives, cubing your cheese, and chopping your fresh basil.
Once your noodles are cooked, drain the water and let sit until noodles are at room temperature (you don’t want your cheese to melt once mixed together). Once your noodles have cooled off, mix all ingredients together in a large serving bowl. Give everything a good coating of evoo and sprinkle with salt and pepper! You can serve right away or chill in refrigerator for about an hour. You’ll love how fresh this tastes and no mayo means no guilt!!
