Hey there! Here is another roasted veggie recipe for you guys. I love roasted vegetables because it’s “hands free” cooking. Once you have everything chopped and seasoned all you have to do it pop it in the oven! I love it! Here’s what you’ll need for these roasted mediterranean veggies.
INGREDIENTS:
– 1 large zucchini, chopped
– 1 carton of sliced mushrooms
– 1 bunch of asparagus spears, chopped
– 1/2 carton of cherry tomatoes, sliced in half
– 2 tbsp minced garlic
– 2-3 tbsp evoo
– salt & pepper
DIRECTIONS:
Preheat oven to 350 degrees. Add all ingredients to a large glass dish and mix well until evoo is well massaged into all veggies. Cover with aluminum foil and bake for 30-45 minutes.
And that’s it! Supper easy and yummy!
