Today I wanted to share this easy recipe with you! It’s one of my favorite ways to cook potatoes. Here’s what you’ll need!
INGREDIENTS:Â
– 10-12 small red skin potatoes
– 1 bunch of asparagus spears
– 2-3 tbsp evoo
– salt & pepper
DIRECTIONS:
Preheat oven to 350 degrees. Wash potatoes and then cut each into four pieces (cut in half and then cut the halves in half). Add them to a large glass dish.
Then wash your asparagus spears and chop into small pieces. I go ahead and discard the bottom pieces because I don’t like the tough finery texture. Add the chopped asparagus pieces to the potatoes.
Toss with 2-3 tbsp of evoo and salt & pepper. I use my hands to massage the oil evenly into the potatoes and asparagus. Cover with aluminum foil and bake in preheated oven for 1 hour. Then uncover and bake for and additional 15-20 minutes.
You’ll then have to most tender delicious roasted potatoes ever! 🙂
