There’s something magical about the fall season. The cooler temps not only elevate your sweater weather game but bring all the fall seasonal flavors table-side. Pumpkin EVERYTHING seems to be EVERYWHERE including your local Starbucks. If you’re anything like me you’ve probably found yourself in the drive-thru or counter-side, face-to-face with the infamous pumpkin loaf!! In all of its amazing glory, this tasty treat sits there…taunting you…as you desperately pull out all the stops trying to resist temptation and “be good”.
Well today, you’re in luck because we’re embracing those sweet tooth cravings and pumpkin flavors but without the guilt!! So, just say no to the loaf and say yes to my delicious baked pumpkin protein oats. This mouthwatering delight will have your tastebuds going wild thanks to its gooey pumpkin chocolate chip cookie taste. It’s the perfect autumn gift from me to you that is sure to warm you up from the inside out!
With cross-fit in full swing, I’ve been tracking macros as part of my gym’s nutrition challenge. I’m fully committed to putting in the work, but I want the food that I prepare to be full of flavor with a side of enjoyment. There’s nothing worse than choking down something that’s less than palatable with chalk-like consistency, especially when it comes to decadent sweet treats!
The hardest part of sticking to my nutrition plan is fighting off those sweet cravings! With my love of all things fall and pumpkin, the Starbucks pumpkin loaf always seems to be swinging after the bell, and of the whistle blows! So, I decided to experiment and come up with a macro-friendly version instead. Not only was it a success, but in the famous words of Justin Timberlake…I’m out for the count and it was a total TKO!! Let’s just say it’ll be making endless rounds at the Murphy house!!
Delicious Baked Pumpkin Protein Oats
Ingredients
- 4 cups quick oats
- 3 ripe bananas
- 2 eggs
- 4 scoops chocolate protein powder (I used the brand SUNWARRIOR)
- 1 can pumpkin puree
- 2 cups milk of choice (I used almond)
- Chocolate chips (enough to layer across the top)
Directions
- Blend all ingredients together until smooth
- Pour into a baking dish
- Top with chocolate chips
- Bake at 375 degrees for 25-30 minutes
