Sweet summer mango guacamole recipe

This heavenly guacamole recipe is not only incredibly simple but full of flavor and fresh ingredients! It makes the perfect summer side dish for your next party or a jazzed-up Mexican night at home because who doesn’t need a little guacamole in their life….okay okay or A LOT!

I don’t know about you but WE ABSOLUTELY LOVE guacamole at our house and even with a large batch we manage to EAT IT ALL!! Is it just me or is there an addictive quality to guacamole and tortilla chips? It’s the dip that never stops giving and I always find myself going back for more!

I put a slight spin on the traditional guacamole recipe and swapped out tomatoes for mangos! The sweetness and juiciness of the mango make it the star of the show! Every bite bursting with tropical goodness…hold on…I’m over here dreaming of beautiful white sandy beaches while booking my next Mexican vacation!

Sweet Summer Mango Guacamole Recipe

Ingredients

  • 2 ripe avocados (halved and pitted)
  • 1 mango (peeled and diced into cubes)
  • 1/2 a bunch of cilantro (chopped)
  • 1/2 red onion (diced)
  • Lime juice (fresh from 1 lime)
  • Salt (to taste)
  • Tortilla chips for serving

Directions

  • Mash avocados: Scoop flesh into a mixing bowl and mash with a fork.
  • Season: Add salt and lime juice to mashed avocados and combine.
  • Freshly squeezed lime juice helps keep your guacamole from turning brown. It also cuts the richness of the avocados.
  • Add remaining ingredients: Add mango, cilantro, and red onion to the avocado mix and stir gently to incorporate all of the ingredients.
  • Serve with tortilla chips.

Tips

  • Guacamole should be served at room temperature. The flavors will be more pronounced and it will taste so much better than if it is cold! Trust me on this one!
  • If you’re not serving your guacamole right away, cover tightly and place in the refrigerator until ready to serve. This will ensure everything stays fresh and delicious!
